Chickpeas with Parma Ham de Sandra CC Octubre 2012 Casa de Ale

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, thinly sliced
  • 1 garlic clove, chopped
  • 1 small red pepper, desseded and cut into thin strips
  • 200g Parma ham, cut into chunks
  • 1x400g can chickpeas, drained and rinsed
  • 1 tbsp chopped parsley, to garnish
  • crusty bread, to serve
  1. Heat the oil in a large frying pan. add the sliced onion, chopped garlic and sliced pepper and cook for 2-4 minutes or until the vegetables have softened.
  2. Add the Parma ham to the frying pan and fry for 5 minutes or until the ham is just beginning to brown.
  3. Add the chickpeas to the frying pan and cook, stirring, for 2-3 minutes until warmed through.
  4. Sprinkle with chopped parsley and transfer to warm serving plates. Serve with lots of fresh crusty bread.
